Easy and quick Italian Hoagies start with a saucy Italian sausage and veggie mixture that gets loaded into hoagie rolls, topped with cheese, and broiled to perfection. These quick hot sandwiches make the perfect filling dinner or lunch!

Italian Hoagies

We love a good hot sandwich at my home — lunch, dinner, afternoon snack…there is no wrong time to enjoy these! They’re savory with a subtle sweetness from the sausage and every bite is packed with flavor! And thanks to a few ingredients that pack in loads of flavor, we don’t need a super long ingredient list. Check out our quick list of “short-cuts” below.

SHORTCUTS

How To Make Italian Hoagies

The following shortcuts will make recipe preparation quicker:

  • To minimize chopping time, buy pre-diced onions typically found in the produce section.
  • Choose refrigerated minced garlic or frozen garlic cubes (like Dorot®) for the quickest possible prep.
  • Italian sausage. The sausage is saving us so much time — it already has lots of seasonings, salt, and flavorings added in so we don’t need to add lots of extra ingredients here.

Ingredient Notes

  • Italian-style ground sausage: Depending on personal preference, use mild or spicy sausage for these Italian Hoagies — either work. (When making this for my kids, we use mild.) Sausage can come in different-sized packages — as long as you’re in the general ballpark, this recipe will work just fine. We use 1 pound, but if you have a 19-ounce package, throw it all in if you like. You’ll just have a slightly meatier meal. If you’re using Italian sausages with casings, remove the casings before cooking.
  • Good-quality tomatoes. Since tomatoes are the primary player for flavor, we recommend grabbing the best quality canned tomatoes you can find! We use and recommend San Marzano whole peeled tomatoes — these are incredible! So much flavor from one simple ingredient!
  • Add fresh basil. This herb really elevates the flavor of this recipe. It adds a needed freshness and vibrancy!

QUICK TIP

Did you know that diced or crushed tomatoes are made from bits and pieces of lower-quality tomatoes, while whole canned tomatoes are going to be the closest thing you get to garden-fresh ripe tomatoes?

Italian Hoagies: Recipe Tips

  • Soften butter so it will spread nicely on the sandwich rolls. To soften butter quickly, pour hot water into a glass bowl or cup (that fits over the butter). After a few minutes, dump out the water then quickly cover the butter. Residual heat from the dish will soften the butter nicely in 5-10 minutes.
  • When broiling, watch very closely as the sandwiches broil — they can go from perfect to burnt in a matter of seconds!
  • Cut the veggies in even sizes: Aim to cut the peppers and onion into small, similar sizes for uniformity and the best sandwich filling. Overly large pieces of veggies won’t get tender in time and don’t meld as nicely into the meat.

QUICK TIP

What exactly is the consistency of softened butter? The butter should be soft enough to leave a finger indent when using a little bit of pressure, but not soft enough to squish or crush the packaging.

STORAGE

The filling for these Italian Hoagies only gets better as it’s stored in the fridge — the flavors meld and intensify beautifully! Store the filling in an airtight container in the fridge for 3-5 days and warm through in a skillet or microwave. Add to a toasted bun and enjoy for days!

Ingredients

  • 1 tablespoon olive oil
  • 2 bell peppers, diced (Note 1)
  • 1 cup diced yellow onion
  • 2 teaspoons minced garlic
  • 1 pound ground mild (or spicy) Italian sausage (Note 2)
  • Fine sea salt & pepper
  • 14-15 ounces canned whole tomatoes San Marzano tomatoes are the best!
  • 1/3 cup thinly sliced fresh basil
  • 1/2 teaspoon each: dried oregano, garlic powder
  • hoagie buns and softened butter
  • Mozzarella or Provolone cheese

Instructions

  • PEPPERS AND ONION: Add oil to a large cast-iron skillet over medium-high heat. Add in the 2 diced peppers and diced yellow onion. Sauté until they begin to soften, about 5 minutes. Add in garlic and sauté until fragrant, 30 seconds. Push veggies to the side and increase heat to high.
  • SAUSAGE: Add sausage to the center of the pan and let it sear (brown) before crumbling with a wooden spoon and browning all the way through. As you crumble the sausage, season with salt and pepper. I add 1 teaspoon fine sea salt and 1/2 teaspoon pepper, adding to taste preference.
  • FINISH MEAT SAUCE: If there is more than a tablespoon of grease, drain it off. Reduce heat to medium-low. Add in the whole tomatoes and surrounding liquid, basil, dried oregano, and garlic powder. Cook for about 5 minutes, stirring occasionally and breaking down the tomatoes with the wooden spoon. Cover the pan with a lid and let simmer for 5 or so minutes while preparing the buns.
  • BUNS: Position the oven rack 4-inches from the heat source and preheat the oven to HIGH broil. Cut buns in half and then spread softened (Note 3) butter (to taste) over the inside of each bun. Lightly sprinkle garlic powder on top of the butter (optional). Place in oven and broil until lightly toasted, 30 seconds to a minute. Remove. Spoon meat sauce on the bottom halves of the buns and top meat sauce with sliced cheese. Return to the broiler and broil until cheese is melted, about a minute (watch closely). Remove from the oven, sandwich the top with the bottom and enjoy promptly!
