Banana Bites (2 Ways!)

Two ways to make the best Banana Bites – these come together in minutes and are eaten up even faster! These make the perfect fun breakfast, great afternoon snack, or delicious dessert.

Banana Bites

These Banana Bites are so easy and fun to make! These have become my kids’ go-to after school snack; they beg to eat them! I’m not complaining about that because they are simple to make, healthier than a bag of chips (and plenty of other snacks), and it’s fun to involve them in the process of making these bites.

Today I’m sharing two different Banana Bites — first up is chocolate-covered Banana Bites and the next is banana” sushi”.

Banana Bites Recipe #1: Chocolate-Covered Bites

These Banana Bites start with two slices of banana. We make a sandwich with nut butter, and dip the whole thing in a mixture of melted chocolate and more nut butter.

A few notes:

  • For traditional peanut butter and banana treat, stick to creamy peanut butter. But for a fun variation, use whatever nut butter you like best: almond butter, cashew butter,  hazelnut butter (like Nutella®). These amazing nut butters make for some really fun flavors (not sponsored). 
  • Use smooth and not-too-oily nut butter. With chunks of nuts in the nut butter or super-oily butter, these Banana Bites can get a bit messy.
  • For a sweet and salty treat, sprinkle a few flakes of Maldon sea salt on top.

Banana Bites Recipe #2: Banana”Sushi”

Start with a tortilla, spread it with nut butter, top it with granola and honey, press a banana on top, and roll everything up. Slice sushi bites and enjoy!

A few notes:

  • For sweeter sushi, add miniature chocolate chips instead of granola
  • For traditional peanut butter and banana sushi, stick to creamy peanut butter. But again, try some fun variations by using whatever nut butter you like best: almond butter, cashew butter, hazelnut butter (like Nutella), in place of the peanut butter.
  • Add your favorite sweetener such as honey, agave nectar, or maple syrup. Or if the banana is sweet enough for you, no need to add any additional sweetener.
  • Use a thin tortilla so the nut butter and banana flavors can really shine through.

QUICK TIP

As you probably know, bananas don’t store well for an extended period of time. These banana bites are best eaten the same day they’re made and as close to being made as possible.

Ingredients

Banana Chocolate Bites

  • 3 ripe, but firm bananas
  • 1/4 cup creamy peanut butter PLUS extra for adding to bananas
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Banana "Sushi"

  • 1/4 cup creamy peanut butter
  • 2 whole wheat flour tortillas (8 inch)
  • 1-2 tablespoons honey
  • 1/4 cup granola or miniature chocolate chips
  • 2 ripe, but firm bananas

Instructions

Banana Chocolate Bites

  • BANANA SANDWICH: Cut banana into slices about 1/4-inch thick. Place slices on a parchment paper-lined sheet pan. Place about 1/4 teaspoon of peanut butter on the center of half of the slices of bananas. Add the other half of the banana and press down gently to form a banana "sandwich." Place in the freezer for 15-20 minutes.
  • CHOCOLATE COATING: Prepare the chocolate: add the chocolate chips, 1/4 cup peanut butter, and coconut oil in a microwave-safe bowl. Microwave in bursts of 15 seconds, stirring in between each burst for 10 seconds, until chocolate is smooth and melted.
  • DIP: Dip Banana Bites in the melted chocolate (I like to lay the banana bites on the tines of a fork and then spoon the chocolate over. Tap the fork on the side of the bowl gently to remove excess chocolate and return to the parchment paper-lined sheet pan). Repeat until all Banana Bites are dipped in chocolate.
  • ENJOY: Place the chocolate-covered bites back in the freezer until set, about 10-20 minutes. We like them cold, but not frozen through. Best enjoyed within a couple hours of being made.

Banana "Sushi"

  • TORTILLA: Spread peanut butter evenly over each tortilla. Drizzle honey (to taste preference) on top of peanut butter; sprinkle with granola or chocolate chips, evenly over the surface of the tortilla.
  • CUT INTO SUSHI: Place a banana in the bottom half of each tortilla. Roll up tightly, burrito style. Cut into one-inch pieces and serve immediately.

  1. Mhmmm I love hoe simple and delicious this recipe is! I always get struck by a HUGE chocolate craving as well, but usually reach for that jar of nutella and have one too many spoonfuls ;). I’ll keep this recipe in mind for the next wave of chocolate-induced craving!
