First up, CARAMEL APPLE RICOTTA BITES. Yum. These four ingredient bites are simple to make and scream all things Fall. I mean caramel apple is quintessential Fall right?!
To make these more of an appetizer and less of a dessert I used ricotta cheese, but to make them more of a dessert you could do some spreadable cream cheese. Then they’d be more like a cheesecake caramel apple bite. ? I like using whipped cream cheese if you are going that route.
The one thing to note about these, they get soggy QUICK. So if you plan on making these, it’s best to set all the ingredients out separately and guests can assemble them and then enjoy immediately.
- Ritz crackers
- Ricotta cheese OR spreadable cream cheese I like whipped cream cheese
- Apples I like Granny Smith
- Caramel Sauce homemade or store-bought
These are best assembled RIGHT before enjoying otherwise they get soggy really quickly.
When ready to enjoy: spread ricotta cheese or cream cheese over the cracker. Top with thinly sliced apple slices and drizzle caramel sauce on top.
To prepare the apples in advance: thinly slice the apple and toss in 1-2 teaspoons lemon juice.
