This warming, hearty, nutritious, Tuscan-inspired meal is one you’ll feel great eating. It’s packed with good-for-you ingredients, it’s satisfying, and it’s total comfort food!

While the ingredient photo shown below may seem like there’s a lot going on, you’ll be amazed at how quickly everything comes together. Most ingredients need no more prep than opening a can or package! The process of making White Bean Gnocchi is simple — just a little bit of veggie sautéing and then everything gets combined in the skillet and baked to cheesy perfection.

QUICK TIP

Tuscan cooking is characterized by simple food, without a lot of heavy sauces. The cooking is typically done with olive oil (not butter) and dishes are usually enjoyed with a crusty loaf of bread!

Let’s chat gnocchi

First off, if you aren’t familiar, gnocchi is a traditional Italian type of pasta. They’re soft, pillowy, thick, and fairly small. Gnocchi are typically made with semolina, white flour, or a mix of both, but the main ingredient remains consistent — they’re always made with potatoes! Gnocchis are tender, light, and taste like a mix between dumplings and pasta. Although the main ingredient is potato, they don’t taste overwhelmingly like a potato — in fact, plain gnocchis don’t have a very strong flavor at all. This is what makes them so versatile and excellent for carrying other flavors in surrounding ingredients or sauces.

For this recipe, you’ll need one package of your favorite shelf-stable gnocchi. While no store-bought gnocchi can ever compare to homemade, the seasonings and other ingredients in White Bean Gnocchi infuse it with lots of flavor. Additionally, as the gnocchi bake they get deliciously tender. To decide what gnocchi to purchase, here is a list of the top sellers on Amazon and a list of taste tester’s favorites. My local grocery store doesn’t have a huge selection, but Gia Russa® Gnocchi is typically my go-to.

White Bean Gnocchi Tips

  • Prep everything before you start cooking. This is a dish where the cooking goes pretty quickly, so you want to make sure to have everything ready to go before starting. Once the onion, garlic, and sausage are sautéed, everything can be added into the pan and baked.
  • Top with freshly grated cheese. To avoid a grainy or greasy topping, I recommend using freshly grated cheese on top of this white bean gnocchi. Pre-shredded cheese has a cellulose coating (which keeps it from clumping in the bag), and affects the way it melts and integrates into this dish.
  • Cook this dish in an oven-safe skillet. This way you can directly transfer from stovetop to oven — no additional dishes needed. If you don’t have an oven safe skillet, I’d recommend a 9×13-inch pan for baking after assembling.
  • Seasonings. This dish doesn’t have a lot of salt and pepper because the chicken stock, the Parmesan cheese, the sausage and the white beans are all fairly salty on their own. That said, you still might need a pinch extra at the end — don’t be afraid to add more salt and pepper until the flavors sing.
  • Add more cheese. If you love things extra cheesy, feel free to add more to the skillet or top individual bowls with more at serving time.
  • Take time sautéing the onion, garlic, and sausage. We’re adding layers of flavor here and if you don’t want crunchy bites of onion, you’ll want to take time getting them tender at the start — they don’t soften much more throughout the cooking process.

Recipe Shortcuts

  • Get pre-sliced produce. Most grocery stores sell diced yellow onions in the produce section of the store. Alternatively, frozen diced onions are often sold by other frozen veggies and can be used in this recipe.
  • Use jarred garlic or a garlic press. Instead of mincing your own garlic, use jarred to save time. Or, a garlic press will get you fresh minced garlic in a fraction of the time that hand mincing takes.
  • Buy bagged, pre-washed baby spinach. Not having to wash and dry spinach for this White Bean Gnocchi is a big time saver! See “quick tip” below

QUICK TIP

 While the spinach doesn’t have to be chopped (and it’s quicker to not chop it), I do recommend a quick coarse chop. When chopped, it integrates better in the dish. Plus, you’ll get spinach in more bites and the smaller pieces are easier to eat. The chopping doesn’t need to take more than a minute; just add the spinach on a cutting board and run a large chef’s knife through it a few times — easy and quick!

White Bean Gnocchi Ingredient Tips

  • Use high-quality stock or broth. The better the stock, the richer this meal will taste. We love Swanson’s Chicken Stock® best (not sponsored).
  • Choose your favorite smoked sausage. We love smoked turkey sausage best in this dish. We’ve also used Italian-flavored chicken sausage and thoroughly enjoy that. Smoked beef sausage also works great in this meal. Use your favorite type of smoked sausage! As long as it’s pre-cooked, it should work.
  • Fire-roasted diced tomatoes. The tomatoes make a big difference flavor-wise in this dish so I recommend good-quality fire-roasted tomatoes. This type of tomato is charred over a flame before being diced and canned. Contact with the flame brings out the tomato’s sweetness and gives a distinct smoky flavor; essentially you’re getting more flavor without any extra work!

Ingredients

  • 1 tablespoon (13g) olive oil
  • 1 medium onion, finely diced (1 cup; 130g)
  • 2 cloves garlic minced
  • 1 package (13 oz.; 368g) Smoked Turkey Sausage, coined
  • 1/4 cup (65g) Swanson's chicken stock (or broth; water works too)
  • 1 can (14.5 oz. 411g) fire-roasted diced tomatoes
  • 1 tablespoon EACH: dried oregano, dried parsley flakes
  • 1/2 teaspoon EACH: garlic powder, paprika
  • Fine sea salt and pepper
  • 1 can (15.5 oz; 439g) white kidney or cannellini beans, drained & rinsed
  • 1 package (16 oz.; 453g) gnocchi (shelf-stable)
  • 1 and 1/2 cups (37g) fresh baby spinach, coarsely chopped
  • 1/2 cup (50g) freshly grated mozzarella cheese (plus more for serving)
  • 1/4 cup (17g) freshly grated Parmesan cheese (plus more for serving)
  • Optional: fresh flat-leaf Italian parsley, finely chopped

Instructions

  • PREP: Move a rack in your oven to the upper third of the oven and then preheat to 425 degrees F (218 degrees C). Prep ingredients before starting -- cooking goes quickly. Dice the onion, mince garlic, cut sausage into coins (~1/2 inch thick), drain and rinse white beans, coarsely chop spinach, grate cheeses.
  • ONION, GARLIC, AND SAUSAGE: Place a large oven-safe skillet (I use a deep 12-inch cast iron skillet) on the stove over medium-high heat. Pour in the olive oil and when hot, add the diced onion. Sauté, stirring frequently with a wooden spoon until the onion is transparent and becoming golden, about 5-7 minutes. Add in the garlic and stir for another 30 seconds. Add the coined turkey sausage to the skillet. Cook until lightly browned, about 3-4 minutes.
  • ADD REMAINING INGREDIENTS: Add in the stock/broth or water, undrained diced tomatoes, oregano, parsley, garlic powder, paprika, thoroughly rinsed, drained, and dried off white beans, uncooked gnocchi (break apart any that are sticking together), and spinach. Season to taste with salt and pepper. (I add 3/4 teaspoon fine sea salt and 1/4 teaspoon pepper.) Stir until everything is well combined. Top with grated mozzarella and Parmesan.
  • BAKE: Bake for 17-23 minutes. If desired, broil for 1-2 minutes for a delicious crispy top (watch closely -- it can go from perfect to burnt in a matter of seconds!)
  • ENJOY: Remove from the heat, and let slightly cool before tasting for any additional seasonings. Top with fresh parsley and enjoy hot! If desired, top individual bowls with more cheese - yum!
  • STORAGE: This dish is best the same day it's made. Leftovers are still tasty, but they do get a little mushy (gnocchi continues to absorb liquid). This dish does not freeze and thaw well; the gnocchis become bloated and mushy.

    This was dinner last night and a BIG hit! I pretty much followed the recipe, except I skipped the S&P and increased the water to 1 cup. Also skipped the broil step, because it was already nicely browned. I’m a little sad that my daughter wanted the leftovers for lunch today, because I had planned on hoarding them.

    I accidentally bought ground sausage for this recipe..I couldnt see that being very good once I really read the recipe so I grilled up some chicken breast and put that in the skillet instead. It was really GOOD!! Even my picky picky children ate it (I may have told the 2year old Gnocchi is noodles since he is fond of noodles). 😉

    We made this recipe last night and the flavors were excellent. However, we used fresh gnocchi (not frozen) and the result was a most unappealing glop. Any suggestions for the future?

    1. I’d try packaged (shelf stable) gnocchi if you can find it — we’ve never had issues with that! Also watch your baking time (it may be faster in your oven) and don’t over-stir. Hope that helps!

        This dish is soooooooooo flavorful that I’ve not added any extra salt (and, I’m a Salt and Vinegar Kettle Chip kind of girl! 🙂 ).

    I made this but made homemade gnocci, boiled and fried so the outside was crispy. Instead of mixing the gnocchi in with the sausage mixture, I layered the gnocchi on top of the sausage mixture in a casserole dish so it was a fairly thin layer. With all the gnocchi on top it really crisped up well.

    1. You could leave out the beans entirely and it can just be more of a veggie sausage gnocchi 🙂

    1. Oh I’m so sorry to hear that! Unfortunately, I don’t think it would taste as good being cooked on the stovetop — I think it would end up kind of mushy. You could cook the gnocchi separately, omit the liquid, and combine the ingredients that way though.

    Awesome recipe! Added chicken breasts and made gnocchi from scratch for a special touch. Boiled the gnocchi first then added to pan just before putting it in the oven- they held up well!

  21. One of my favorite dinners to make- I read a comment asking if it can be made on the stovetop & I saw you reply that you wouldn’t recommend it. I made this the other night and have a broken oven. I actually doubled the recipe & cooked it on the stove and it turned out perfect as always. I added about 3/4 C more liquid (even after doubling recipe) and put the lid on and let it simmer on med low for 15 minutes. I threw the cheese on last and stuck in under the broiler (which does still work) for a few minutes. I hope this helps anyone with the same issue!

    Made this for dinner last night and it was a hit. I did have to make one adjustment. I started out in a 10 inch cast iron skillet. But quickly ran out of room. So I put the gnocchi and spinach in a 9X13 baking pan and poured all the hot ingredients on top and gave it a good stir. Followed the recipe as recommended. Delicious!

    Just want to share that this recipe is my go-to for taking meals to friends, family, new moms, etc. This recipe has brought so much comfort to so many people. It is so popular that everyone who gets it steals it and uses it for THEIR meal trains, so I have to bring something else!

    Tonight I added lacinto kale instead of spinach since I had some wilting in the crisper. A packet of Italian seasoning mix (like for dressing) also makes a great addition.

    OMG this was incredible!! I sat down with my plate and as soon as I took my first bite I said “oh my gosh this is amazing I’m making this again.” The flavors were so complementary, it was hearty and creamy and savory and I treasured each bite.   35. Hi I’ve made this now and it’s great!! My 5 year old liked it normally gnocchi is a no no! I added more garlic cloves and garlic powder as we love spice and one cube of chicken stock to 1cup water. I added paprika paste and doubled the sausage it’s perfect even without the cheese. Instead of tomatoe I chucked in basil passata as it’s the only thing I had. Keep posting more recipes I have enjoyed this and was super quick to make.

    What side dishes can u have with this? I was thinking of making bread or something?

    I made this vegetarian using the Impossible gound savory sausage which I sauteed with the onions and garlic. I also used a filled (ricotta and spinach) gnocchi I had in the freezer. I sauteed it first and then added to the mix. I left out all of the liquid. It was delicious! My eighteen year old loved it, too.

    1. Not that I know of. Perhaps frozen tortellini would work, but I haven’t tested it here. It will be fine without spinach!

    This was delicious! My husband wanted to have 3 servings! I made a couple of changes to the recipe due to what I had on hand. I used hot Italian bulk sausage and plain diced tomatoes. I also added some yellow peppers. I did not have to Broil as it was nicely born on top after 20 min.
